Seafood Casserole Empty Seafood Casserole

Try as I might I could not find the recipe I was looking for, this was the closest I could find. Once I have my recipe I will replace this one or just make another post.

Seven Seas Casserole
Prep Time: 25 minutes
Cook Time: 35 minutes
Total Time: 1 hourIngredients:
•2 tablespoons butter
•1 onion, chopped
•2 cloves garlic, minced
•1-1/2 cups long grain white rice
•3 cups chicken broth
•1 (16-ounce) jar Alfredo sauce
•1 red bell pepper, finely chopped
•1 cup shredded Havarti cheese
•1 (6-ounce) can medium shrimp, drained
•1 (6-ounce) can flaked crab meat, drained
•1 cup frozen baby peas, thawed
•1/4 cup grated Parmesan cheese
In large saucepan, melt butter over medium heat. Add onion and garlic; cook and stir 4-5 minutes until crisp-tender. Add rice; cook and stir for 3-4 minutes. Then stir in chicken broth.
Bring to a simmer, reduce heat to lower, cover, and cook 15 minutes until rice is al dente. Stir in Alfredo sauce, red bell pepper, and Havarti cheese.

In greased 2-1/2 quart casserole, layer half of rice mixture, then all of the shrimp, crab, and peas. Pour remaining rice mixture over all. Sprinkle with Parmesan cheese.

Bake in preheated 350 degrees F oven for 30-40 minutes until casserole is hot and bubbly. Serves 6

Casserole can be made ahead of time; cover and refrigerate before baking. Uncover and bake as directed, adding 10-15 minutes to baking time.
